The Actual Pickle Story
The tradition of pickling was developed before the green revolution and modern day appliances and techniques as a solution to the problems of food scarcity and seasonality of produce and they carry a host of health benefits and were invented to both save the vegetables and to extract the most nutrition we can out of each bite.
The irony of the modern world that we have added preservatives and additives and use cheaper ingredients to increase the shelf life of a product that doesn't have an expiry date because Oil and Salt are natural preservatives which are used in the pickling process.

3 - Pickles in oil and Salt
